It is an extracellular enzyme which randomly hydrolysis Alfa-1,4- bonds in amylose and amylopectins. Thus helps in rapid reduction in wort viscosity and complete solubilization of grain starch.

SAC-300 is an exo-amylase derived from a selected strain of Aspergillus niger . It is an extra-cellular enzyme which hydrolyses Alfa -1,4- bonds in amylose and Alfa 1- 4 & Alfa 1-6 bonds in amylo-pectins, from non-reducing end of the polymer, producing D- glucose. Thus helps in rapid hydrolysis of amylose and amyl pectin to D-glucose.
